Feeling productive!

Before noon today, I:
-had my follow-up blood test
-got coffee & a bagel and read a bit of my book at a local coffee house
-got the Vibe's oil changed
-mailed a very late Xmas package to relatives
-got groceries
-took books back to the library and got new ones

Now, I'm noshing on a little dish I dreamed up myself: rosemary olive oil bread slices topped with red, green, and yellow pepper slices, with crumbled tomato-basil feta cheese on top, toasted in the toaster oven. It tastes just as good as I imagined it would.

This afternoon, my plans include
-folding laundry
-doing dishes
-cleaning up some clutter
-finding an hour or two to relax, read, and dink around
-meeting J. at the gym.

Not a bad last day of vacation...

Any particular type of feta? I've noticed that depending on the Kroger one uses, the available brands can vary wildly. Our small local Kroger carries only one or two types of feta (though the one we purchase is quite tasty and inexpensive) but the larger Kroger on Stadium has many more options.

I am a big fan of feta. Nothing like feta and fresh cracked peppercorns in a pita. Maybe a little leafy lettuce. And perhaps some garlic sauce.

Strangely enough, I never really ate much feta until I met Jo, who has expanded my cheese horizons. ;)

I don't know the brand, though I could check when I get home. I got it at the Whittaker Rd. Kroger. I just saw "basil-tomato" and had to have it.
