What I've been cooking

We went in with some friends to buy a share from a local farm and got our first delivery on Thursday. I've been reading up on what to do with Kale and bok choy and napa cabbage since I haven't used them much before.

I posted about my adventures with kale here.

I also read up on nutrition- boy, kale is a nutritional superstar! One cup has 13 times your RDA of vitamin K, almost twice your RDA of vitamin A, 88 percent of your vitamin C and almost 10 percent of your RDA for calcium, all for under 40 calories. Pretty good nutritional density!

As a side dish, I made stir-fried green beans with ginger and garlic, and that was really yum, too!

My experience with Kale was amusing too. I had no idea what to do with it, but google is my friend. I ended up removing the stems, chopping the rest, and just pan-sauteing it with olive oil and garlic, and it was pretty good. Still rather tough, so I'm thinking I should maybe chop it finer next time, or I've also read that pre-soaking it helps some.

The leaves weren't tough by the time it came out of the oven, but the stems were a bit. I'll try pre-soaking, though.

I actually did something very similar to your frittata last night - I made mini kale-scallion quiches for a party. They were a huge hit. I made 9 bigger ones in a normal muffin tin, thinking Kip and I could have them for dinner before the party and lunch today, but Kip ate them all last night before I could wrap them up!
